1 8oz container of original whipped cream cheese for a lighter texture or bar of original cream cheese (softened) for a firmer texture
1 package of Buddig Corned Beef or regular Beef (in the lunch meat section) or similar deli meat
2-3 green onions
1/2 tsp garlic powder
Small jar diced pimientos
For traditional dill pickle dip:
Dry the pickle spears on paper towels and pat dry.
Finely chop pickles and place in a mixing bowl.
Finely chop the corned beef by hand or grinding in a food processor, add to mixing bowl.
Add the cream cheese to mixing bowl and mix all ingredients together.
Dip is best chilled at least an hour before serving.
Double the recipe for a large group. Serve with crackers or pretzel chips.
Another variation is to add any one of the following or all optional ingredients. For garlic lovers, add a 1/2 tsp garlic powder to the mix. To add a hint of onion, add green onions finely chopped including the green stems for color.
For another variation and some festive color, add a drained small jar of pimientos to the mix.
