Wedge Salad with Bloody Mary Vinaigrette

Wedge Salad with SuckerPunch Bloody Mary Vinaigrette

Makes 4 - 6 servings

1 head iceberg lettuce

10 slices bacon, cooked and crumbled

1 ½ cups cherry tomatoes, halved

1 ½ tablespoons chives or scallions, minced

1 cup bleu cheese or ranch dressing

½ cup bleu cheese crumbles

1 cup SuckerPunch bloody mary vinaigrette, recipe below

SuckerPunch Bloody Mary Vinaigrette

1 cup SuckerPunch Original Blend Bloody Mary Mix, SuckerPunch Bold and Spicy Bloody Mary Mix, or SuckerPunch Fiery Habañero Bloody Mary Mix

½ cup extra virgin olive oil

Whisk bloody mary mix and olive oil together until fully emulsified. Hold chilled until ready to serve.

For the Salad Assembly - 

Remove the outside leaves of the iceberg lettuce, and wash the lettuce well. Sit the head of lettuce on a cutting board, core down, and using a sharp knife, cut 4 - 6 wedges (1 per person) through the core of the lettuce.

To assemble, drizzle each plate with a small amount of both dressings, and set the wedge of iceberg on top of that. Drizzle with as much more dressing as desired, and top with the bacon, tomatoes, chives or scallions, and bleu cheese crumbles.
